Garlic Time and Garlic Oil Bread

Today I finished up the garlic braids, and cleaned up the rest of the garlic for using this year until next garden season. Someone asked on a garden post how long garlic last. It pretty much depends on how you use it, and how you store it. Generally around our home about 1 year. I have had some of mine dry out before the next garden season and when they do I make my own garlic power, and garlic salt.

I recently learned you can actually freeze your garlic. I have not tried that method but if I felt like I was not using my garlic before it went bad freezing it is a good option.

I am enjoying the look in my kitchen. Check out the hanging garlic braids...

This year I am sharing a fun way to do your own garlic bread.
Olive Oil And Herbs Garlic Bread

What’s the secret to good garlic bread? Garlic. Fresh Garlic.

I usually make my own bread but (I buy it also) you can use french bread or ciabatta or any bread you like. And you can slice them however you’d like.

Ingredients

  • 1 loaf sourdough or ciabatta bread
  • 1/3 cup extra virgin olive oil
  • 4 garlic cloves minced
  • 2 Tbsp fresh parsley chopped
  • Freshly ground pepper to taste
  • 4 Tbsp grated Parmesan cheese

  • Instructions

  • Cut the bread into even slices and spread on a baking sheet (or two)

  • In a small jar, mix the olive oil, minced garlic and fresh parsley. Close the jar and shake to blend.

  • Brush or spoon the olive oil garlic mixture generously on the cut side of each slice of bread. Season with fresh cracked black pepper, if desired.

  • Sprinkle each piece with grated Parmesan cheese.

  • Broil in the oven until they are toasted and the cheese has melted, about 3-5 minutes.

  • Enjoy immediately.

See my past post on different ways to store garlic. Wow, we have been growing garlic since 2011...

    12 Recipe Ideas for Crostini

The toppings may include a variety of different cheeses, meats, and vegetables, or may be presented more simply with a brush of olive oil and herbs or a sauce. Proscuitto  di Parma Ham...
(Italian for "ham." A broadly used term to describe a ham that has been seasoned, salt-cured (not smoked), and air-dried. The meat is pressed producing a firm, dense texture. Prosciutto is a classic first course when served with melons and figs. Prosciutto can also be added at the last minute to cooked foods such as pastas or vegetables. Prolonged cooking will toughen prosciutto) I love this ham but at the price of $21.00 per pound ...sometimes I use Boars Pesto Parmesan Ham...both make an excellent panini.

Panini Bread and the Cuisinart Griddle and Panini Press!!!

    Cuisinart Griddle and Panini Press
"In Italy, panino (Italian pronunciation: [paˈniːno]) is the word for a sandwich made with a bread roll. Sandwiches there are customarily made from a roll or loaf of bread, typically a ciabatta or a rosetta. The loaf is cut horizontally and filled with salami, ham, cheese, mortadella, or other food, and sometimes served warm after having been pressed by a warming grill. A toasted sandwich made from sliced bread is not called "panino" but "toast" by Italians, and is usually filled with prosciutto and a few slices of cheese, grilled in a sandwich press. A popular version of panino in Central Italy is filled with porchetta, slices of pork roasted with garlic, salt, rosemary, and sage.
In the USA, UK and Canada, the term "panini" refers to any pressed and toasted sandwich ("toastie"); there is widespread availability and use of sandwich presses, often known as "panini presses" or "toasted sandwich makers".
I got turned onto these sandwiches a few years back when Zupa's (a restaurant that has opened up here in our area that sell gourmet panini sandwiches).  I love their square pieces of bread that they use for their sandwiches. Then a Harmons opened near us, they have a area near their gourmet meats and cheese's that sell gourmet panini's. They make there own bread which looks alot like flour tortilla's.
I love this method, it's easy, fast and fits perfect in the Cuisinart griddle and panini press my children gave me for Christmas a few years ago. I love it!!!

So how do I make Panini sandwiches for My Gardner Guy....lets start with the bread.
To start with I use a simple white bread recipe and add a few spices...

    3 1/2 cups flour
    1 TBSP yeast
    1 TBSP sugar
    1 TBSP  olive oil
    1 TBSP rosmary
    1 1/2 tsp salt
    1 1/2 cup warm water

Add all ingredients using bread paddle mix until all kneaded well together. Dust with corn meal and place in a oiled bowl cover and allow to raise. About 2 hours....

    Divide into 8-9 parts
If you have a tortilla press this next step goes fast especially if you have a electic tortilla press as you press and cook the bread at the same time.

If not simply roll out into rounds and lighty cook on griddle

Next step lets makes some Panini's !!!

Come back as I will be posting some great panini recipes....

Homemade Croutons....garnish dishes for My Gardner Guy!!!

    Make Your Own Croutons

Once you make your own you will see how much better tasting they are and how easy. I save left over buns, ends of breads, day old french bread, etc. and put them in the freezer. When I have collected enough I make a big batch...
    1. Cut some day-old or stale  bread into cubes.
    2. Drizzle the bread cubes with olive oil. Toss in a pan.
    3. Spice them up with a few shakes of Italian seasoning, garlic powder, or whatever spices sound good. Toss again. I have been enjoying using the spice salad supreme, and grounded up sun dried tomato's...
    4. Bake at 400° for 5 minutes. Shake and toss. Bake until toasted. ***Pay attention so you don’t burn them!
    That’s it!  Enjoy...............

    Challah Bread

This is a good panini bread for smaller sandwichs, excellent for french toast....it is a large recipe so I half it...
I got this recipe from my oldest daughter, all three of my kids have turned out to be pretty good cooks....it is fun to share recipes with them. This is going to bread that I will make often for My Gardner Guy....infact chicken panini's tonight and french toast this weekend...

    Challah Bread

    3 T. Yeast
    2 c. Warm water
    2/3 c. Sugar (or honey)
    1 T. Salt
    1/2 c. Canola oil
    7-8 c. Flour
    4-5 large eggs

To a large mixing bowl, add water, yeast, sugar. Let sit for about 5 minutes. To that, add salt, half of the flour, and oil. Mix together. Add the eggs, mix to combine, then add the rest of the flour. Knead for a few minutes and determine whether you need more flour. The dough should be a little moist, but if it feels too moist, add more flour and continue kneading until it's no longer sticky. Cover and let it rise for about 1 hour.

Punch down the dough, dump onto a floured surface, and divide dough into 2 pieces - set one piece aside. Divide each of the two pieces into three pieces and roll into snakes about 12-15" long. To start your braid: line the three pieces up on the counter, join them together, pinch, and tuck under - then braid. Finish by pinching and tucking the end of the braid just like you did at the top. Gently place your braided dough on a buttered cookie sheet. Cover with a light towel and let rise for another hour or until it's doubled in size.

Repeat for the remaining piece of dough. Brush dough with egg wash - 1 egg mixed with a little water). Bake at 350 degrees until golden brown, about 15-18 minutes.

    Makes 2 large loaves.

     Have fun.....
     Georgie

In the past three years I have started making a banana glaze to top this delicious treat...My Gardner Guy loves it. The best thing about this recipe is that it freezes well. In fact I have a few grandcritters who perfer eating it this way (partly frozen). This bread is good with and without the special banana glaze. My Gardner Guy has a very sweet tooth come 8:00 pm every evening....with the glaze it's more like a cake to him!!!

    Banana nut bread...

1/2 cup butter (or 1/2  cup of mashed banana) See notes below...Health-conscious
    1 1/2 cups sugar
    2 eggs
    1 tsp vanilla
1 tsp of baking soda disolved in 4 Tbsp of milk
    2 cups flour
    3 bananas (smashed)
    1/2 cup of nuts (optional)

To start with add baking soda to milk set a side and smash up your ripe bananas. Cream butter and sugar, add eggs and vanilla. Add the flour, soda mixed with milk and bananas....mix well and last add the nuts of your choice. Walnuts and pecans work great as well as taste great in this bread. This recipe makes three small loaves or one large one. The baking time for the small loaves in arounf 45-50 minutes, I find when I do a large loave it takes longer to get the center completely done. Around 60-65 minutes. To keep bread from getting to dry or brown the last 15 mintues I cover the loaf with a sheet of tin foil.Bake at 350 degrees...

    Glaze

    1 cup powdered sugar
3 tbsp. liquid (milk - water - fruit juice, etc.) I use milk
1/4 cup of dried banana chips grounded (I use small coffee grinder)

Mix all the ingredients and spread on warm bread......

Health-conscious cooks know that applesauce, prunes, pumpkin puree and mashed bananas may substitute for all or some of the butter used in baking. If you're lucky enough to have a trusted low-fat cookbook that already has done the calculating for you, follow the recipes. But if you'd like to transform a beloved traditional recipe, you may need to experiment. Sources like MayoClinic.com suggest replacing about half of the butter or other fats with mashed banana, while some extension services claim that bananas may replace all of the butter with good results.
